Keto Cloud bread, also called Oopsie bread is an old low carb staple. I go back to it every now and then because it is really so simple and can be made with as few as 3 ingredients!

It can also be modified to make it fancier by adding various spices and flavorings, and you can also make a Dairy free cloud bread.

Keto cloud bread is a staple for those who do the Egg Fast to break a stall and the dairy free cloud bread option is perfect for low carbers who have an issue with cheese and dairy.

What can you do with this Keto Cloud Bread? 

Well, let me tell you!

  • You can season it every which way to Sunday, for example an Italian version, Taco spice version and how about Everything Bagel seasoning on it? (Make your own Everything Bagel Seasoning here!)
  • Avocado sandwich (spread some guac and enjoy!)
  • Fried egg sandwich (my personal favorite)
  • Use as bread for Egg salad sandwich
  • Make some mini pizzas
  • Basically, anywhere you might use a bread or a bun, you can use this ultra low carb cloud bread

Important Notes for Making Perfect Keto Cloud Bread

I’m an admin in a large Egg Fast facebook group (where these cloud breads are a staple) and so I’ve heard a few questions and problems that come up when people try to make the egg fast cloud bread. Here are my best tips for best results:

  • Start with room temperature eggs (leave on the counter for 2 hours)
  • Be very careful when separating the egg whites from the egg yolks because even a small amount of yolk will cause your whites to not stiffen up
  • Beat egg whites at high speed until you can turn the bowl upside without them coming out
  • Yes, you can make these without cream of tartar! I do it all the time! Some people swear by 1/2 teaspoon vinegar in the egg whites but again, not necessary.
  • If you are not making these for the egg fast, feel free to add 1/2 teaspoon baking powder and 1 tbsp psyllium husks, this will give them a more bread like texture
  • Watch them carefully in the oven after 20 minutes, they can burn easily

Dairy Free Cloud Bread option:  Simply substitute 3 tbsp mayonnaise for the 3 ounces cream cheese

 

BBBE option : Substitute 3 tbps Butter Mayo for the 3 ounces Cream Cheese.

High Fat Carnivore Version (80/20)

Add up to 2 ounces grated frozen fat. For example grated butter or bacon grease. Add at the end in the last step of making the batter.

Egg Fast Cloud Bread

Keto Cloud Bread with Dairy Free, BBBE and Egg Fast Options

Yield: 6 Cloud flat buns
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

These cloud breads are a perfect low carb replacement for buns and breads. Use them for egg sandwiches and grilled cheese on the egg fast or for burgers and many other uses when doing keto. Now has BBBE as well as 80/20 High Fat Carnivore option!

Ingredients

  • 3 eggs, separated
  • 3 ounces cream cheese (or 3tbsp mayo for dairy free) or 3tbsp Butter Mayo for BBBE
  • pinch of salt
  • 2 ounces frozen butter or bacon fat, grated
  • Optional ingredients: 1/2 tsp vinegar

Instructions

  1. Preheat oven to 300
  2. Separate whites and yolks into 2 glass bowls
  3. Add pinch of salt and 1/2 tsp vinegar(optional) to egg whites
  4. Beat at high speed with electric mixer until egg whites are stiff and you can turn bowl upside down. Set aside.
  5. Beat egg yolks and cream cheese (or mayo) gently until smooth.
  6. If using grated frozen fat, add it now.
  7. With a rubber spatula, gently incorporate the egg whites and yolk mixture together
  8. Divide into 6 equal portions, either into a whoopie pan or mound onto regular cookie sheet
  9. Sprinkle with any desired spices
  10. Bake for 20-25 minutes, watching carefully after 20 minutes.

Notes

For the Egg Fast diet, 2 Cloud breads = 1 egg and 1 ounce cheese.

For the dairy free option, 2 Cloud breads = 1 egg and 1 fat

To make them dairy free, simply use 3 tbsp mayo in place of the 3 ounces cream cheese.

  1. This is such a great recipe! I used 3 tbsp of butter instead of the butter mayo and they turned out great. I’m wondering how these freeze if I were to made a big batch of them to have on hand.

  2. About the optional psyllium husks, when and how do I add them? And do you mean whole psyllium husks or powdered (which I do myself in my Vitamix) ? I am planning on trying this recipe as a lower calorie and low carb replacement for a pizza crust (we’ll see if that works). Thanks!

  3. I love this recipe! I’m making my 2nd batch for this week. I do have a question for you: the recipe calls for 3 oz of cream cheese or 3 tbsp mayo. From what I can find online, 1 oz of cream cheese equals 2 tbsp. Then I noticed that when you list the cloud bread numbers for the egg fast, you count 2 breads as 1/2 ounce cream cheese. But I’ve been using 3 oz each time, which would equal 1 oz for 2 slices. Can you please clear this up for me?

    1. The mayo is for those people who want to keep it cheese free. On the egg fast mayo is counted in tablespoons and cream cheese is in ounces. And while it’s true that 1 ounce of cream cheese would measure out to 2 tbsp, for the purposes of those doing the egg fast, that is the exchange, they sub 1 tbsp mayo for each ounce of cream cheese. Clear as mud right!?
      As far as counting the breads, the recipe makes 6 pieces of cloud bread and calls for 3 ounces of cream cheese and so you are absolutely correct on that point! Thank you so much for finding that error and I am going to fix it right now!

      2. Hello, Anita. I made this today. But my cloud bread so crumbly and need a little bit effort to loosened it from the pan. I made the non-cheese one. This recipe is so easy to make and keep me from boredom of eating egg in their true form. Hope I don’t be afraid of eggs after finish the fast ???

        1. If you have parchment paper that can help. Cloud bread does have to be watched because it can overcook fast. Have you tried the egg fast chaffle yet? They are way more forgiving and the longer you cook them the better they are! Check those out here!
