I made it to Day 2 of of my Egg Fast plan! And Holy Egg Diet Batman! I lost 1.5 pounds on this first day!

Morning Latte

5:30am – same as yesterday, my version of Bullet Proof Coffee made with 2 cups (16 ounce) of coffee, 1 tbsp each of coconut oil and butter, dash cinnamon and dash pink salt. 

I throw it all in my Vitamix to make my morning latte.

I drank this while I answered a few emails and did a bit of moderating in the Egg Fast Facebook group.

Egg Fast Muffins (or Loaf)

8:30am 3 Egg fast Cream cheese muffins. I should do a whole separate post about these muffins because I have learned some tips and tricks. For now, here is the quick & dirty :

  • Melt 4 ounces cream cheese and 4 tbsp butter on medium heat in a glass measuring cup in the microwave until soft. (Mine took a couple minutes at 50% power).
  • Using a whisk,  whip 4 eggs and 2 tbsp any flavor Skinny Syrup or equivalent of 2 tbsp sweetener into the glass measuring cup.
  • Pour batter into 6 muffin tins or 1 loaf pan. ( I always double it so use more pans if needed).
  • Bake at 325 for about 30 minutes for muffins and about 45 minutes or longer if in a loaf pan. (I use silicone muffin tins because no cooking spray required)

Egg Diet Menu plan- devilled eggs12:30pm – Devilled Eggs. 3 eggs cut in half. Remove yolks and mash with 2 tbsp mayo. Salt and pepper. Easy, easy.

5:30pm.  Grilled Cheese Wafflewich. Oh this is sooo  delicious! If you recall, I made a double batch of egg fast waffles last night and saved 4 waffles for today.

I buy the sliced cheddar from Costco (each slice is about 3/4 ounce) and this is NOT those processed cheese slices.

  • I measured out my tablespoon of butter  and put half in my green non-stick frying pan.
  • Put the cheese slice between 2 waffles and slap it down in the pan. 
  • Press it into the sizzling butter until browned, and then flip it over until I can see the cheese is melting.
  • Repeat this with the other 2 waffles, butter and another slice of cheese. Enjoy!

So today on my second day I had a bit of a headache and NO hunger, however while putting the finishing touches on this post (by doublechecking my math!) I realized I had 1 tbsp fat too many!

Ooops. I am trying to train myself to not eat unless I am hungry, so I may or may not eat a boiled egg sometime this evening. But I just wanted to put it out there that I make mistakes with this too! :-)  

Just move on and do the next right thing!

Total for the day:  7 eggs, 8 tbsp fat and 4.5 ounces of cheese.

    1. Those items are not on the egg fat so you will have to make that call if you want to use them or not. Since this is a fast and for only a few days, my recommendation is to follow it exactly as it’s laid out for best results. Most people blend butter and or coconut oil in their coffee and it comes out very creamy. Give it a try!

    1. I would say that falls under the umbrella of spices and condiments to be used sparingly. So a little splash should be just fine!

  1. I cannot find Vanilla Bean Powder anywhere. Is there anything I can substitute on the 3 cream cheese muffins?

  2. Well-thanks to ALL, for the inspiration. Tomorrow I’ll be on day 4 of the EGGS and cheese thing. My husband is not happy about my doing this as we are retired and had been eating together. But–he stopped all wheat a couple of years ago and lost 85 lbs. So-I gave up bread too. BUT–it was this egg part of the Keto that has helped me already loose 10 lbs (7 days-I didn’t get strict with myself till three days ago. My goal is to lose 40. If anyone checks my facebook, I’m in several face/body painting groups; face painters diet too. Maybe they will accept me. My Keto’s are capsules;not powder. I do take another powder drink-the green one–sometimes and I am big on nine golden raisins soaked in GIN a day. (If you never heard of it–check it out. I have been doing that for at least 30 years.) I hate to cook but will try your waffles. Even my husband could eat them and we have hazelnut syrup on hand. Oh–for the BRAIN, I also take nine blueberries a day, but, I consider those like vitamins; not extra food while I am doing the eggs. Like I said, just one more day of just egg/cheese and the coconut oil with my turmeric, and pepper or whatever. I uped my intake of the Keto capsules to 2 a day. Do you think that is too much? Thanks all.

  3. I just made these and they came out lovely. I only had to bake mine for 30 minutes. I added some lemon juice and zest to the mix. ☺️

Hi….very interesting..can I snack on anything else on the egg fast…….can I use extra virgin oil for frying eggs and is it recommended to eat the cheese only at meal times…..also could I use the mayonnaise to make a coleslaw…just very new… Love your blog…will it slow down weight loss if I eat more eggs…is a tablespoon of butter or fats recommended with each egg….many tks

    1. haha, I can imagine! They tend to puff up really big but then they will flatten when they cook because there is no flour or baking powder. But worry not, they taste great!

  7. Couldn’t find the tips and tricks post for the cream cheese muffins or how many the recipe yields…help! Just back from Paris and need this eggfast! :(

    1. ha, sorry that post is not published yet, life got in the way! But the most important thing to note about that recipe is that it is made with 4 eggs and 4 fats, therefore 1/4 of the recipe counts as 1 egg and 1 fat (and 1 ounce cheese). So make your muffins and depending on the size of the muffin tins, you might get 4 muffins or 6 or 8. Whatever it is, just divide by the number of eggs always.
