Keto Egg Puff Recipe with Bacon, Blue Cheese and Chives
When I was doing the 5 Day Egg Fast I made a basic Egg Puff Recipe which was totally awesome! Now I have taken that same recipe and elevated it with a few simple ingredients.
These Keto Egg Puffs are going to look amazing on your holiday brunch table. You can even scroll down to watch how I assemble it on a simple video I made.

Are Eggs Good for Keto?
That’s a resounding yes!
Eggs have less than one carb and have 6-7 grams of protein.
They also contain many valuable nutrients such as lutein and zeaxanthin which are antioxidants that may help eye health.
Another important nutrient in eggs is the good levels of choline. Choline actually helps to process fat and cholesterol!
It is very important to eat the entire egg on a Keto diet. While the whites do contain the protein it is the yolks that contain all the good nutrients and help to metabolize the very things that protect people from high cholesterol.

Just a few bonus cooking tips for making the Keto Egg Puffs:
- I use pre-cooked bacon for recipes like this. Simply put the precooked bacon on a paper towel and microwave it for a minute, they will be crispy when they cool down
- Snipping fresh chives with scissors is way easier than chopping them.
- This Non-Stick Metal Muffin top pan is my best friend! They are also perfect for making Keto Oopsie Rolls or Cloud Bread. If you do not have this, you can use a flat baking sheet with parchment paper and just shape the egg puffs with a spatula.
Ingredients for Keto Egg Puff Muffin Recipe with Bacon, Blue Cheese and Chives
- 6 Eggs
- 1/2 c blue cheese crumbles (or use goat cheese or feta)
- 4 slices bacon (crisp cooked and crumbled)
- 1/4 c chopped fresh chives
- fresh ground black pepper (if desired)

How to Assemble the Keto Egg Puffs (be sure to also watch the video first!)
- Preheat oven to 400 degrees.
- Separate the eggs, putting all of the whites into 1 large bowl, and each of the egg yolks into their own small bowls. (I keep a variety of these handy silicone dishes on hand for cooking)
- Beat the egg whites until stiff peaks form
- Gently fold in blue cheese crumbles, bacon and chives, saving some for garnish.
- Spoon into a non stick muffin top pan and make a dent into each egg puff.
- Bake 6 minutes and remove from oven.
- Slip an egg yolk into each indentation.
- Sprinkle with pepper if desired and bake another 3-4 minutes.
- Sprinkle with remaining bacon, cheese and chives
