Slow Cooker Pork Chops with Creamy Mushroom Sauce
In the past I’ve always shied away from cooking thick pork chops because it was so hard to get it just right!
If you cook too little people are afraid of the pink inside a pork chop. But cook too long and and you are eating something not so tender.
But once I discovered slow cooking pork chops in a crock pot, that was a game changer!
This is by far my most favorite ever keto pork chop recipe and the mushroom sauce makes it even that much more decadent!
What you will need to make these slow cooker keto pork chops
- olive or avocado oil
- fresh garlic cloves
- thick bone-in pork chops
- sliced mushrooms, crimini or baby bella
- chicken broth
- heavy cream
- cream cheese
- parsley to garnish
You will also need a frying pan and your slow cooker or crock pot.
Tips and Tricks for this slow cooker pork chop recipe
- For best results get bone-in pork chops, as thick as possible and with a good fat cap
- Check the chops at the 4 hour mark and don’t cook past 6 hours.
- If you are doing Carnivore, you can leave out the mushrooms, the sauce is technically animal kingdom! And it’s delicious!
- Save leftover sauce in the fridge to have over something else the next day. If you fondly remember recipes containing cream of mushroom soup sauce, this stuff is even better!
This makes a superb family dinner served over cauliflower mashed ‘potatoes’

Slow Cooker Pork Chops with Creamy Mushroom Sauce
Cooking these thick bone-in pork chops in the slow cooker makes them so tender you won't need a knife! This is a perfect keto Sunday supper and will become a family favorite. Serve over low carb cauliflower mash.
Ingredients
Pork Chops:
- 2 Tbsp olive oil
- 2-3 cloves garlic, crushed
- 4 thick-cut bone-in pork chops
- Sea salt and black pepper, to taste
- 8 oz. sliced mushrooms
- ½ cup chicken broth
Creamy Mushroom Sauce
- ½ c. heavy cream
- 8 oz. cream cheese, cut into small cubes
- 2 Tbsp fresh parsley, finely chopped
Instructions
- Heat olive oil in a large skillet over medium heat. Add crushed garlic cloves and saute until the cloves turn golden, approximately 2 minutes. Remove garlic to a plate.
- Season the chops with salt and pepper on both sides. Add to the hot skillet and sear chops on each side until nicely browned, approximately 2-3 minutes per side. Transfer to platter with the garlic and set aside.
- Add the sliced mushrooms to the skillet and season with additional salt and pepper, if desired. Sauté, stirring occasionally, until the mushrooms release their liquid and develop nice color, approximately 5-6 minutes.
- Deglaze the skillet by pouring in the chicken broth and gently scraping the skillet with a spatula to loosen the flavorful brown bits from the bottom. Remove from heat and set aside.
- Transfer the pork chops to a 6-quart or larger slow cooker or crock pot and pour the mushrooms and broth on top.
- Cover and cook on low for 4 to 6 hours. Once finished, remove the lid and transfer the chops to a plate.
- Add 1-2 tbsp of the hot cooking liquid into a cup with the heavy cream before stirring into the slow cooker crock. Add the cream cheese pieces and stir vigorously until it is completely incorporated into the sauce with no remaining lumps.
- Transfer chops to individual serving plates and top with some of the creamy mushroom sauce and some fresh chopped parsley. Serve immediately with cauliflower mash or your choice of sides. Enjoy!
