Easy Shredded Zucchini Pizza Bites | Low Carb Keto Pizza Recipe

These easy baked shredded Zucchini Pizza bites are more like little pizza cups and you are going to love them! They have all the flavor of pizza without the carbs!

You will need to use a muffin tin to make the shredded zucchini pizza bites in order to shape the cups. If you are a regular reader of this blog you know how passionate I am about my silicone bakeware! I have never had anything stick to the pan yet!

Zucchini is low carb and very nutrient dense. It can be used in so many ways, peeled, shredded, spiralized, and more. Zucchini makes a fantastic substitute for breads or noodles and adds a delicious flavor that bread and pasta can’t offer. I love cooking with zucchini, and knowing zucchini is okay on Keto means I can eat it without worry.

Bonus Cooking Tip: What is Passata?

The only other thing is a word about passata. Passata is basically strained uncooked tomatoes and gives a fresher tomato taste to your dish.

It is usually found in a glass jar or in a tetra pack. There was a time you had to go to an Italian specialty market but now Passata is available on Amazon and most grocery stores.

If you cannot find passata, the best substitute is to stir some canned tomatoes through a strainer.

 

Low Carb Zucchini Bites Recipe

Serves: 6

Ingredients:

1 Zucchini
1 cup Mushrooms (chopped)
1 Red Bell pepper (diced)
½ Red Onion (diced)
1 cup Mozzarella (shredded)
24 Pepperoni slices (small like for pizza)
1/3 cup Passata (or strained canned tomatoes)
1 tsp Dried Oregano
1 tsp Dried Thyme

Directions for Peeled or Shredded Zucchini Pizza Bites:

Preheat the oven to 320 °F.

Make pizza filling: in a bowl combine mushrooms, bell pepper, onion, passata, oregano and thyme.

Using a potato peeler or a mandoline slicer, peel zucchini into thick ribbons and use them to line the cups in a 12 hole muffin tray. 

Fill the zucchini cups with the following (layering in order):

  • Mozzarella
  • Pepperoni (1 slice per cup)
  • Pizza filling
  • Another pepperoni slice
  • Mozzarella again

Bake for 30 minutes. Leave to cool in the pan for at least 5 minutes before removing. If the zucchini has released a lot of water during cooking, sit on an absorbent paper towel for a minute or so before serving.
