Easy Keto Skillet Lasagna

This easy keto skillet lasagna is a fast weeknight meal that comes together in about 30 minutes! Family and kid friendly, it is a one pan dinner to make cleanup a breeze as well!

Easy Keto Skillet Lasagna

 
I’m always on the lookout for easy keto meals so when I saw  Easy Keto in 30 Minutes at my local Costco I grabbed it! The author Urvashi Pitre is a recipe blogger that I respect very much and I own some of her other cookbooks as well.
PS They ended up sending me a copy of the book so I will plan a giveaway for it in the near future, since I already owned it!
 
I chose Skillet Lasagna because I knew my family would love it and eat it. Who doesn’t love the taste of lasagna?!
 
This easy keto skillet lasagna has all the flavor of traditional lasagna but only a fraction of the work!
 

Ingredients you will need for this easy keto lasagna

  • Olive oil
  • ground beef
  • celery
  • onion and garlic
  • marinara sauce (my favorite is Rao’s homemade)
  • eggs
  • Lots of cheese! mozzarella, parmesan and ricotta
  • Italian seasoning

You will also want to use an oven proof skillet of some sort.  My favorite for this type of recipe is my 2 handled cast iron pan.  The second handle makes it so much easier to get in and out of the oven.

Tips and Tweaks for Making This Low Carb Skillet Lasagna

To me, one of the hallmarks of a great family recipe is to be able to change things around and it still turns out great!  I made some simple tweaks and I also have some ideas.

  • I made this with ground turkey and it was excellent! 
  • The recipe says 4 Servings but I was stuffed with 1/6 of the recipe.  You can easily feed 6-8 people with this if you also have a side salad and keto buns or keto pasta on the side.
  • I’ve already got plans to make this again and use cream instead of marinara for a white lasagna.

Easy Keto Skillet Lasagna

This easy keto skillet lasagna is a fast weeknight meal that comes together in about 30 minutes! Family and kid friendly, it is a one pan dinner to make cleanup a breeze as well!

Ingredients

Meat Layer

  • 1 teaspoon extra-virgin olive oil
  • 1 pound 85 percent lean ground beef
  • ¼ cup diced celery
  • ¼ cup diced red onion
  • 1 clove garlic, minced
  • ½ cup low-sugar marinara sauce
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper

Cheese Layer

  • 8 ounces ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • 2 large eggs, lightly beaten
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon minced garlic
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper

Instructions

1. Heat an ovenproof skillet over medium-high heat; add the oil.
2. Once the oil is hot, add the ground beef, celery, onion, and garlic.
3. Cook, breaking up the meat with a wooden spoon, until no longer pink, 5 to 6 minutes.
4. Stir in the marinara sauce, salt, and pepper.
5. Reduce heat to low. Simmer, stirring occasionally, while you make the cheese layer.
6. In a large bowl, stir together the ricotta, half of the mozzarella, the Parmesan, eggs, Italian seasoning, minced garlic, garlic power, and pepper.
7. Spread the cheese mixture over the top of the meat mixture.4.Sprinkle with the remaining mozzarella cheese.
8. Cover and cook on medium-low heat until the cheese is hot and cooked through, 10 to 15 minutes.
9. Meanwhile, preheat the broiler. Broil lasagna until top is browned, 2 to 3 minutes.
10. Let stand 10 minutes before serving

    Did you ever try making it with a white sauce? How was it? Did you just use cream or did you add cream cheese?

    1. The white sauce was great! I just kind of patch it together using butter, some parmesan and cream, the heavy cream thickens up nicely!
