Ground beef is generally leftover beef trimmings from roasts and steaks. Sometimes you will see ground sirloin or something specific like that which would be leftover sirloin pieces that have been ground up.
Ground beef is often labelled as Lean, Extra Lean and so on. This refers to the meat to fat ratio in the ground up mixture. I am in Canada so this information below is from Canadabeef.ca:
- EXTRA LEAN (10% maximum fat) great for flavour-packed recipes that you don’t drain after cooking. Use in meat loaf or cabbage rolls.
- LEAN (17% maximum fat) Canada’s No. 1 grind is a good all-purpose choice. Use in all kinds of ground beef recipes.
- MEDIUM (23% maximum fat)
- REGULAR (30% maximum fat) use for grilling, broiling and drain to reduce fat before adding to your recipe. Use Medium in burgers and meatballs, and Regular or Medium in pasta sauces and casseroles.
The leaner the ground beef the higher the price. For Keto, medium or regular is more optimal with the added fat so don’t feel that you need to buy the leanest most expensive ground beef!
