  • Salted vs unsalted butter is a personal choice. Use your favorite butter. You can use half salted/half unsalted as well.
  • The longer you brown your butter, the more intense the flavor, so experiment to find your favorite.

Ingredients

  • 2 Sticks of Butter

Instructions

  1. With the stove set to medium, place your 2 sticks of butter into a pan.
  2. Melt your butter in the pan and then reduce the temperature to medium low. You will see the butter starting to foam at the top. You want to stir and scrape the sides often.
  3. When the butter starts to brown, you will need to keep an eye on it as once it begins to brown, it can brown very quickly.
  4. If you prefer a milder flavor, remove the pan from the heat when it's a golden brown. The browner it gets, the more intense the flavor will be.
  5. When your desired darkness has been achieved, remove from the pan and let it cool for a few minutes.
  6. Pour the contents of the pan into a large measuring cup, preferably glass. Be sure it's large enough to whip without spattering all over. Be sure to scrape all of the brown bits from the pan. This is where your flavor is!
  7. Put your measuring cup in the fridge to let it cool. A good start time would be 10 minutes. You want the butter to be completely cooled, but not hard. It should be thickening along the edges of the container.
  8. If adding flavors or sweeteners, this is when you will add them. See tips and tricks for some flavor options.
  9. Whip the butter until it is a good, creamy consistency, approximately 3 minutes. If it's not whipping well, put it back in the fridge for another 5 minutes.
  10. Once all whipped, you can fill your molds and freeze. You can also just place the whipped butter into a small mason jar and spoon out as needed. You can use a measuring spoon or simply fill the molds. If you don't have a mold, you could line your sheet with parchment paper and spoon out 1 tablespoon at a time and free form your bites.

  • 1 Stick of butter = 1/2 cup = 4 ounces = 8 Tablespoons = 24 teaspoons

  1. This was my second time making brown butter bites. I used salted butter the first time and didn’t care for it. I wanted to try the whipped kind so I bought unsalted butter. The butter at one point didn’t have any of the foam anymore and then got a bit more. When i took the butter off, which wasn’t too dark but the little bits were all burnt. 🫨 I am still going to try to whip it but I may have to start over. Has this ever happened to you?

    1. You do have to keep an eye on it because it can go from done to burnt very fast. What you can do is strain the butter through a coffee filter to remove most of those bits if they are burned. It will still be good.
      Also if you are doing this in a pan that is dark it can be hard to see what color the bits really are so just take it off sooner, they don’t need a lot of browning to be nicely flavored.

      1. I brown my butter sticks in the oven at 300 for approx 35-40 minutes. (once you do it once you can figure out your baking time) Comes out perfectly every time and I don’t have to babysit it!

  2. How much vanilla extract would you use? I’m afraid of it being too strong since pure extract can be a little… extra.

    1. Lately I’ve switched to using pure ground vanilla beans, you don’t get that alcoholly after taste and a little goes a long way. If you use liquid vanilla extract, try 1 teaspoon and see how that is. If you get the powdered vanilla try 1/4 tsp: https://amzn.to/46hpM81

  3. Question about your first bullet under Notes: Why is 1 stick of butter listed as 1/4 cup? All the sticks of butter I’ve seen are 1/2 cup?
