Easy Cheesy Low Carb Keto Pulled Pork Noodle Casserole
This easy, cheesy keto pulled pork noodle casserole is a great recipe when you’ve got leftovers, or when you’ve got a bunch of people to feed. And it’s carnivore!
If you’ve ever had a pulled pork macaroni and cheese casserole, that’s what we’re going for here with this delicious recipe.
Normally it’s made with macaroni, cheddar, noodles, and some barbecue sauce.
The more you lean toward the carnivore diet, the more you’ll want to add the least amount of ingredients.
Instead of macaroni, I’ll use the egg-fast pasta noodles.

First, I’ll bake the noodles for this recipe.
I would normally do this a few days ahead of time or make a double recipe of noodles if I’m making them for another carnivore or keto recipe and have them on hand.
These egg fast noodles are a great option for many recipes because you can use them in so many different ways. .They’re easy to keep in the freezer or on hand.
Pro tip: You can also make a double recipe or pork and use the leftover pulled pork for this recipe. The less work you have to do, the better! You could also use the leftover pulled pork to make an easy meal like a pulled pork sandwich-or any pork sandwich of your choice, a lettuce wrap, pork bowls, pork nachos, or any number of easy recipes.
Cheesy Keto Pulled Pork Noodle Casserole

Ingredients
- Egg Fast pasta noodles (see recipe) Make these ahead of time and cut them into 1.5/2 inch lengths
- 1 lb. leftover pulled pork
- 1/4 cup heavy cream
- 1/4 cup pork jelly (jellied liquid after making pork roast), or stock/broth
- 6 oz. cream cheese, cubed and at room temperature
- 1 cup extra old cheddar, grated
- 1/2 cup mozzarella, grated
- Reserve about 1/4 cup of your grated cheeses for the top
- 1 green onions, sliced and green separated from the white (omit if carnivore)
- • 1 Tbsp. butter
Instructions
- Preheat your oven to 350°.
- Melt your butter over medium heat in an oven safe skillet, if available. (see note)
- Sauté the white part of the green onions until translucent.
- Add your cream cheese and start breaking it up so that it softens and melts.
- Add in your pork Jell-O. Mix until the cream cheese is incorporated.
- Add the cheddar and mozzarella and stir it up.
- Add your heavy cream and whisk everything up until the cheeses have all melted and incorporated.
- Turn your stove down to low. Add your noodles to the pan and mix them up with the sauce.
- Add the cold pork to the pan, spreading it around over top of the noodles and sauce. Sprinkle with the sliced green onion tops.
- Over this you will sprinkle the reserved cheese blend.
- Cover and bake for 20 minutes. (In the last 5 minutes of baking, remove the lid)
Notes
- If you're not strict, you could add some sugar-free BBQ sauce over top of the pork before baking or add a little to your plate.
- Make your pasta noodles a day or two ahead of time, the recipe is linked in the ingredients.
- Use the jellied pork from a roast. You could even use beef jelly or whatever you have on hand. If you don't have anything fresh, you can use stock or even just water.
- If you don't have an oven-safe skillet with a lid, you could make your sauce in a saucepan and move it over to your baking dish. Cover with foil.

About Your Cut of Pork
The best cuts of pork to use for this recipe are pork shoulder or pork butt. First, they are more budget-friendly than pork chops and other leaner and tougher cuts of meat.
The pork loin is too lean of a cut to use for this cooking method.
If you don’t have a crock pot or slow cooker you can also use the instant pot to pressure cook or braise your pork roast in the oven for 3 hours.
Making Your Cheesy Low-Carb, Keto Pulled Pork Casserole
Here are the steps for this delicious keto pork recipe:

- Cover and bake for cooking time 20 minutes. (In the last 5 minutes of baking, remove the lid)
You could also cook this in the slow cooker (or crock pot). Slow cooking can help make those tougher cuts of meat more tender.
You could also use the instant pot or braise your pork in the oven for several hours.
Make sure you put your leftovers in an airtight container in the fridge.
