Keto Steak & Guinness Meat Pie

A British Pub inspired meat pie with hearty steak, mushroom and Guinness Stout filling.  A Chaffle crust keeps the carbs low but the meat lovers won’t mind at all! You can make the rich meat filling either in the Instant Pot or in the oven. Or make this rich Keto stew on it’s own and use the Chaffles for dunking.  Your choice!

Keto Steak & Guinness Meat Pie

I recently picked up a couple meat pies for my son from a local British Specialty shop.  They were $9 each for a single serving meat pie.  Nine dollars. 

Right then and there I decided to make a Keto meat pie!

I knew I would make it with Chaffles because they can stand up well to a hearty stew and I find that too much almond flour just makes me feel unwell.

Ingredients Needed for Keto Meat Pie

  • Chaffle ingredients (eggs and grated cheese) or make your favorite chaffles for this.  Check out this post for making basic chaffles.
  • Stewing beef
  • butter
  • celery and mushrooms
  • 1/2 onion (optional, I can’t eat onions anymore so I leave them out)
  • Guinness stout
  • cheddar cheese
  • dried garlic, onion and rosemary

Meal Prep Tips

  • Chaffles can be made in advance and kept in the fridge until you need them.  This recipe uses 8 Chaffles
  • The Beef and Guinness filling can be made in advance
  • Meal prep by making double the Steak and Guinness filling and serve leftovers as a hearty stew for another meal.
  • If you don’t have a Mini Dash Chaffle maker, make waffles and line a casserole dish instead for a larger meat pie. Or just eat the filling like a stew and serve over the waffles.

Keto Steak & Guinness Meat Pie

Yield: 4

You can make the rich meat filling either in the Instant Pot or in the oven. Or make this rich Keto stew on it's own and use the Chaffles for dunking.  Your choice!

Ingredients

Meat 'Pie' Crust - 8 Chaffles

  • 4 eggs beaten
  • 1 cup grated mozzarella
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 c grated cheddar (reserved)

Meat Pie Filling

  • 2 tbsp butter
  • 1.5 lbs of stew beef or cubed steak or brisket
  • 2 celery ribs
  • 1 cup sliced mushrooms
  • 1/2 onion (optional)
  • salt and pepper to taste
  • 1 tsp dried rosemary
  • 1 tsp garlic powder
  • 1 tsp onion powder(omit if using raw onion)
  • 1/2 bottle of Guinness stout
  • 4 oz grated sharp cheddar

Instructions

Make Chaffles:

  1. Heat up Chaffle maker
  2. Mix all Chaffle ingredients except cheddar in a bowl
  3. For each chaffle, sprinkle some reserved cheddar on waffle maker and pour in a very scant 1/4 cup of egg mixture.
  4. Close lid for 3 1/2 minutes
  5. Place chaffle on rack to set.
  6. Repeat for 7 more Chaffles

Make Meat Filling (Oven Method):

  1. Preheat oven to 375
  2. Melt butter then saute celery and mushrooms until mushrooms turn color
  3. Liberally sprinkle salt and pepper over meat cubes and add to pan.
  4. Add garlic powder,onion powder and rosemary
  5. Stir fry for 5 minutes
  6. Add stout until meat is covered (should be about 1/2 the bottle)
  7. Cover and bake for 1 1/2 hours until meat is tender
  8. (PS This part of the recipe also works great in an instantpot using the stew button)
  9. When the meat comes out, put back on stove without the cover and simmer for 10 minutes until the liquid is reduced (or as long as needed).
  10. Allow to cool slightly, then add in 2 ounces of the grated cheese.


Meat Filling (Instantpot method)

  1. Turn Instantpot to Saute
  2. Melt butter then saute celery and mushrooms until mushrooms turn color
  3. Liberally sprinkle salt and pepper over meat cubes and add to Instantpot with spices.Stir fry for 5 minutes
  4. Add stout until meat is covered (should be about 1/2 the bottle)
  5. Place lid on Instantpot and press Meat or Stew button.
  6. Allow Natural release for 10 minutes. If the stew is watery, then press Saute button and allow to bubble until most of the liquid is evaporated.
  7. Allow to cool slightly, then add in 2 ounces of the grated cheese.

Assemble Meat Pies

  1. Preheat oven to 350. Butter the ramekins.
  2. In the bottom of each ramekin place one chaffle
  3. Divide the meat mixture among the 4 ramekins
  4. Top each with 1/2 ounce of grated cheddar
  5. Top each pie with one chaffle and if desired, sprinkle a little more cheese on top
  6. Bake for about 30 minutes
  7. Allow to cool for a few minutes before eating.

  1. I made this for St Patrick’s day and it was delicious. I did end up having a lot of liquid, so reduced it down and added a tiny bit of xantham gum to make a sauce. Thanks for sharing such a great recipe.

  2. I haven’t made this recipe (YET!), but have made regular Guinness Stew. One warning I would add is to be sure to use Guinness Draught, **NOT Stout**. If you use the stout, your stew will be bitter.
