How to Cook Tripe. Before using tripe in a recipe, it is usually necessary to cook it first, either by boiling or in the pressure cooker. Here you will find the basic instructions on how to prepare tripe for most recipes!

Buying Tripe From the Store
Before you can cook tripe, you need to get some!
I have been able to easily get tripe from any Asian market as it is used in many Asian dishes. In fact I had already eaten tripe several times before I even knew what it was! You will often find tripe in Asian soups in restaurants(as in the picture above)
If there are no Asian markets in your area then ask your local butcher or farmer.
You will want to be sure to buy tripe that has already been cleaned. It should be a whitish color like in the photo below. If it’s greenish or gray then you will have to clean it yourself. I’m not willing to do that!
One thing to keep in mind when you are buying tripe is that it reduces down considerably when cooked. So be sure to buy enough for your recipe. If a recipe calls for 8 ounces of tripe, buy 16 ounces to cook as a rough guide.
Also be sure that you are getting the honeycomb tripe. It is the best one for most home cooking purposes and tripe recipes. (Notice the honeycomb pattern in the picture below).
How to Boil Tripe
- Place the tripe in a large pot of water completely covering the tripe.
- Add salt, be very generous!
- Bring to a boil and allow it to boil for 20-30 minutes.
- Remove the tripe with a slotted spoon and into a colander. Rinse it off.
- Discard the cooking water
- Cut into smaller pieces or whatever is required for the particular recipe you are making
How to Cook Tripe in the Pressure Cooker
- Place the tripe in your Instant Pot or pressure cooker.
- Add 1 cup of water per pound of tripe.
- Add salt, be very generous!
- Pressure cook for 30 minutes, then do Instant release.
- Remove the tripe with a slotted spoon and into a colander. Rinse it off.
- Discard the cooking water
- Cut into smaller pieces or whatever is required for the particular recipe you are making
Now it is ready to be used in recipes!

As with most “tough cuts” low- and-slow is the way to go for a tender product. Also, add a bayleaf or two when boiling tripe. I luv it in Caribbean soups and in Trippa Florentina. Enjoy!
I’m thinking the same thing and it’s been a long time since I cooked it. My handed down family recipes aren’t too detailed and I have short term memory issues. I came here to see what others say, and I do remember it taking longer than that. More like an hour and more.

I also remember when my grandma made this, to me that pot boiled for hours with the tripe. lol
There is no fricken way tripe is done in 30 minutes!
